My husband suggested that I post a recipe this week in honor of “The King,” Elvis Presley, born on January 8, 1935. He claims that “The King” loved banana and peanut butter cookies. (Wikipedia was unable to confirm this.) So here is my tribute to “The King.” Adapted from Cooks Forum.
Banana Peanut Butter Cookies
Makes about 4 dozen
1 egg, beaten
1/2 cup honey
1/4 cup brown sugar
1 lg. (ripe) banana, mashed
1/2 cup peanut butter
1 1/2 cup whole wheat flour (white flour can be used)
1/2 teaspoon baking powder
1 teaspoon salt
Preheat oven to 350F. Lightly grease cookie sheets.
Stir together the egg, honey, mashed banana and peanut butter in a large bowl. Mix the dry ingredients together, then add to the banana mixture. Stir well.
Drop by the teaspoonfuls onto a greased cookie sheet about 2 inches apart.
Bake for 10-12 minutes. Cool on rack.
