Pat Sinclair’s new book, Scandinavian Classic Baking, is 96-pages, filled with delicious breads, cakes, cookies, and pastries, which transport you to Scandinavia without the hassle of a long plane ride. Her book is filled with beautiful photographs of local scenes as well as gorgeous shots of her recipes.
My great-grand father was from Sweden, and as a child I grew up in a community where many people came from Sweden, Denmark, or Norway. I was raised on cardamom cookies, sweet kringle, and rhubarb tarts. So when I received Scandinavian Classic Baking, I immediately looked for those treats. I was not disappointed. Sinclair’s detailed recipes make it nearly fool-proof to create delicious breads, pastry, classic kringle, cakes, and Scandinavian cookies.
Sinclair also reminds us of the beauty, broader cuisine, and cultural history of this region. Each two-page recipe spread is accompanied by a photo insert of the region and a vignette about the area. My favorite insert accompanies the Swedish Pepparkakor, a traditional spicy ginger cookie served at Christmas. The vignette there is about Dala horses, wooden carvings of horses, painted in many colors and styles, which originated about 400 years ago in Sweden. These traditional carvings relate to different regions of the area and are a favorite souvenir.
