“Chubby Hubby” Crispy Rice Treats

Named after Ben & Jerry’s Chubby Hubby ice cream, this peanut butter, chocolate, and pretzel all-in-one gooey marshmallow treat is simply awesome. It has the right amount of sweet and salty goodness to satisfy any snack craving. Can be made with gluten-free rice cereal and gluten-free pretzels.

“Chubby Hubby” Crispy Rice Treats
Makes 9 to 12 cookies

4 cups crispy rice cereal, gluten-free or regular
2 cups crushed pretzel pieces, gluten-free or regular
2 cups semi-sweet chocolate chips
3/4 cup unsalted, creamy organic peanut butter
6 tablespoons (3/4 stick) unsalted butter
10 oz. bag mini marshmallows

Line 9- x 9-inch baking pan with foil paper, allowing 2 inches to hang over the sides. Spray lightly with vegetable oil. Set aside.

In a large mixing bowl, add rice cereal, pretzels, and chocolate chips. Set aside.

In a medium saucepan over low heat, melt butter and marshmallows. Mix until smooth. Add peanut butter and stir until well combined. Pour marshmallow mixture over cereal mixture. Stir to coat evenly. Press into prepared pan.

Cool at room temperature, or place in the refrigerator, for 1 to 2 hours until firm. Using the foil overhang, lift cookies out of pan, and cut into bars.

Store cookies, layered between wax paper, in an airtight container, for up to 3 days.
