Apple Picking Time=Another Apple Cookie Recipe

Today’s conversation about weekend apple picking inspired me to find a suitable apple recipe to complete any adventure to the apple orchard. If the recipe below doesn’t suit your taste, check out the gluten-free recipe that I posted in August. That recipe, unlike the one below, is very crunchy and tart, made with almonds, apples and coconut, which can be sweetened to taste with agave nectar or a little sugar, if too tart. The recipe below made with crunchy apples and organic peanut butter is in my flavor sweet spot.

Apple Cookies with Peanut Butter
Makes about 4 dozen cookies
1/2 cup butter
1 cup sugar
1/2 cup crunchy organic peanut butter
3 lg. apples, chopped finely, Granny Smiths or Macs
2 cups flour
2 eggs, beaten
2 tsp. vanilla
1 1/4 tsp. baking powder

Mix butter, sugar, peanut butter and eggs until creamy. Add remaining ingredients, mix thoroughly.
Drop by teaspoonful on lightly greased cookie sheet. Bake at 400F for about 5 minutes, until golden brown. Remove to cookie racks to cool.
